Northeast Florida's Finest Chefs Reunite
ATLANTIC BEACH, Fla. - Ted Peters has achieved a
distinguished career working at some of the finest restaurants
in North America and Europe. Bringing his culinary expertise
to One Ocean Resort & Spa in Atlantic Beach, Peters creates
an intuitive dining experience for his guests that explores the
North Florida region and offers innovative, well-balanced and
flavorful choices. Most recently, Peters was named Culinary
Director of Remington Hotels, Luxury Division.
With culinary experience spanning brands like The Savoy Group, Ritz-Carlton and Rosewood Hotels & Resorts across France, England and Canada, Peters is a gourmet-cuisine veteran. He has made a name for himself hosting renowned wine festivals, appearing on distinguished committees and judging panels, as well as immersing himself in local charities and gracing the pages of publications like Wall Street Journal, Maxim magazine and Ocean Drive. Peters also joined the exclusive few invited by New York City's James Beard House to cook for food and wine enthusiasts seeking the ultimate culinary experience in a legendary setting.
Peters has concepted and opened multiple Remington Hotels restaurants which include Azurea, Verdea in West Palm Beach and the soon to be Jardenea located at The Melrose Hotel in Washington, DC. He also lead the redesign and concepting of an upscale gastro pub located at the Hilton Marietta Hotel & Conference Center and at Silversmith Hotel in Chicago in 2013.
His previous experience includes serving as the executive chef of Caneel Bay Resort, A Rosewood Resort in St. John, U.S. Virgin Islands and Acqualina Resort & Spa on the Beach in Sunny Isles. Prior to the property's opening, Peters worked at Rosewood Mansion on Turtle Creek in Dallas, TX. Peters honed his culinary talents early in his career at top-tier hotels and resorts such as The Ritz-Carlton Hotels in Boston and Amelia Island. He also spent time in Europe cooking at the iconic Savoy Hotel, A Fairmont Hotel in London, as well as the prestigious Auberge de l'Abbaye in Beaumont En Auge, France.
While residing in South Florida, Peters attained great success as the chef de cuisine for The Gaucho Room at Loews Miami Beach Hotel, where he contributed to the restaurant earning a Four-Star and Four-Diamond rating and was then promoted to executive sous chef of the resort.
Peters' culinary experience began with summer jobs in small country clubs in Connecticut where he first fell in love with the creativity and camaraderie of the kitchen. He holds a Bachelor of Science degree in Food Service Management, as well as an Associate of Occupational Studies degree from Johnson & Wales University in Providence, R.I.
Under the direction of Peters, the signature restaurant of One Ocean Resort & Spa, Azurea, has quickly established its own food and wine personality, creating a culture of passion and seeking perfection. Located on the beach, Azurea remains true to its local surroundings, providing an elegant, artfully inspired atmosphere, where a view of the ocean is accessible from any seat in the house. Playing host to Friends of the James Beard, Azurea is the only restaurant in North Florida to host the prestigious culinary organization. As a Wine Spectator award of excellence restaurant, Azurea is one of three AAA four-diamond awarded restaurants in all of northeast Florida.
In addition to Azurea, Peters oversees all food and beverage outlets at the resort including meetings and special events' catering, weddings as well as in-room dining, spa cuisine, Pool Bar & Grill and the Lobby Coffee & Wine Bar.
